Pancakes with Strawberries

1 1/2 C all purpose flour
3 tsp. baking powder
1 T Sugar
1/2 tsp. salt
1 beaten egg
1 C skimmed milk
2 T vegetable oil
  Sift dry ingredients together. Combine egg, milk and salad oil; add to dry ingredients, stirring just till moistened. Cook on a hot griddle. Strawberry Sauce 1 - 10oz. package frozen strawberries, thawed 1/4 - 1/2 C sugar 2 T cornstarch Drain strawberries, reserving the syrup. Add enough water to syrup to make one cup. In a sauce pan, combine sugar and cornstarch; stir in syrup. heat over medium-high heat till mixture thickens. Add strawberries. Serve over pancakes. Top with non-dairy low-fat topping.
