Apple-Cheese Coffee Cake

1 C all purpose flour, unsifted
1 C whole wheat flour, unsifted
1/4 C sugar
1 1/2 t. baking powder
1/2 t. baking soda
1/2 t. salt
1 C shredded cheddar cheese
2 Golden Delicious apples, peeled, cored and shredded
3/4 C buttermilk
2 T vegetable oil
1 large egg

Preheat oven to 375 degrees. Lightly grease and flour a 9 x 9 x 2 inch baking pan. In a large bowl, combine the all-purpose flour, whole-wheat flour, sugar, baking powder, baking soda and salt; mix in cheese and apples.

In a bowl, stir together the buttermilk, egg, and oil. Make a well in the center of the flour mixture, pour in the buttermilk mixture, and stir just until combines. Spoon batter into the prepared pan, smoothing it to the edges.

Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes in the pan. Turn out onto serving plate. Serve warm or at room temperature.

(Optional)
Can be topped with a glaze made of - 1 cup of powdered sugar, 1/2 t. vanilla flavoring, and enough water to form a thick liquid. Drizzle over cake while still warm. Also, can be served with a whipped topping.
