8 oz. Sausage (ground or link)
1 T. Margarine or oil
1/2 Cup Onion, chopped
10 1/2 oz. canned cream soup (mushroom or celery) low fat
1/4 Cup low-fat milk
1 pound frozen hash browns or 4 medium potatoes, sliced
1/2 cup shredded cheese
Preheat oven to 350-degree-F and grease a 2 quart casserole dish. Cut sausage links in half or crumble ground sausage and brown. Remove sausage from skillet and discard fat. Saute onion in margarine, butter or oil until tender.
Stir soup and milk into onions.
Place the potatoes in the casserole dish and top with the sausage. Pour soup mixture over the potatoes and sausage. Sprinkle cheese on top and bake at 350-degree for 25 minutes until bubbly and to an internal temperature of 160-degree.
