Peanut Butter Cupcakes


3T Brown Sugar
3T All-Purpose Flour
2T Peanut Butter
1T Margarine

In a small bowl, stir together all topping ingredients until crumbly. Set aside.


1C All-Purpose Flour
1t Baking Powder
1/4t Salt
1/4t Ground Cinnamon
1/4C Peanut Butter
3T Margarine
1 Egg
3/4 C Brown Sugar
1/2 C Low-Fat Milk or Reconstituted Nonfat Dry Milk

Preheat oven to 375 degrees F and grease 12 cup muffin tin.
In a bowl, stir together flour, baking powder, salt and cinnamon.
In another bowl, beat together peanut butter, butter and brown sugar until light and fluffy.
Add egg and beat well. Add flour mixture and milk alternately, mixing well after each addition.
Spoon batter into muffin tin, filling each cup 1/2 full. Sprinkle each with some of the topping mixture and bake at 375 degrees F for 20-25 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Cool completely and serve.
