Spring Day Potato Salad

2T        Yellow Mustard
2T        Sour Cream (low-fat or fat-free)
1/2 C    Mayonnaise (fat-free)
3t          Liquid Smoke (optional)
3T         Sweet Pickle Relish
1 1/2 t   Salt
1t          Black Pepper
1t          Celery Seed
6           Medium red potatoes (about 2 lbs.) cooked, peeled, cubed
1/2 C     Sweet Onion
2T         Olives, chopped (optional)
4            Hard-cooked egg whites, chopped

In a small bowl combine mustard, sour cream, mayonnaise, liquid smoke, sweet relish, salt, pepper and celery seed; set aside. In a large bowl combine potatoes, onions, olives and eggs. Add dressing and toss lightly. Serve warm or cover and refrigerate.
