JONESBORO, AR (KAIT) - Jessica Wrenfrow, ASUN-Jonesboro instructor of hospitality services, encourages creative use of pumpkins, dishes and containers this time of year.
"You can be creative and none of it has to be hard," Wrenfrow said.
She points out that her featured recipe this month has only 4 ingredients.
"It's probably something you already have in your cabinets," Wrenfrow said.
Here's her recipe for "Fluffy Pumpkin Dip."
1 (16 oz) Cool Whip, thawed
1 large box vanilla instant pudding
1 (15 oz) can pumpkin
1 1/4 teaspoons pumpkin spice, add more to desired flavor
In a large bowl, mix together the vanilla pudding mix, pumpkin, and pumpkin pie spice. Fold in the Cool Whip. Then, chill in the refrigerator at least 2 hours before serving. Serve the dip with ginger snaps, wafers, or graham crackers. The dip can be served in a hollowed out pumpkin.
Wrenfrow said she refrigerates the dip; never leaving it out for long periods of time. She also displayed chocolate cupcakes iced with orange colored frosting adorned with chocolate trees made by her students. The chocolate drizzled from melted chocolate in the shape of a tree and allowed to harden. Wrenfrow leads classes for the community once a month as part of ASUN's Culinary Experience.
