1 T Reduced-Calorie Spread 1/2 C Green bell pepper 1/2 C Red bell pepper 1/2 C Onion 1-1/2 C Fat-free Cholesterol-free Egg Product 1/4 C Skim Milk 1 C Pkg. Brown & Wild Rice Mix 1 small can sliced mushrooms (optional) 1 C Shredded reduced-fat Swiss Cheese
Melt spread in electric nonstick skillet on medium heat. Cook bell peppers and onions in spread, stirring frequently, until vegetables are crisp-tender.
Mix egg product, milk, rice mix and 1/2 C of the cheese; pour over vegetables. Reduce heat to low. Cover and cook 15 to 20 minutes or until eggs are set; remove from heat. Sprinkle remaining cheese on top. Cover and let stand about five minutes or until cheese is melted. Serve immediately.
