Make-Ahead Breakfast Casserole

1 lb. sausage
6 slices bread, cubed
1 C cheddar cheese, grated
2 C skimmed milk
8 eggs, slightly beaten or
2 C egg substitute
1 t. dry mustard

Crumble sausage in medium skillet;   cook over medium heat until brown, stirring occasionally.  Drain well.   Spread bread cubes in a 9x13-inch baking dish sprayed with a non-stick vegetable spray;  top with sausage and cheese.  Combine eggs, milk and seasonings; beat well and pour over cheese.  Cover and refrigerate overnight.  Bake uncovered at 350 degrees for 35 to 40 minutes or until set.  Makes 8 servings.
