1 Whole boneless chicken breast, sliced lengthwise into eight pieces 1 T. Olive oil 1 six inch flour tortilla 1/4 C Monterey cheese Spice rub, optional (Makes one quesadilla)
Spice Rub: Combine 2 T garlic powder, 1 T salt, dash cayenne, 2 T black pepper, 2 T paprika
Place olive oil in skillet over medium heat. Sprinkle breast with spice rub and sauté until cooked through. Place flour tortilla on sheet pan and top with cheese. Melt under broiler. Place sautéed chicken on top of cheese and top with red and green pepper salsa. Serves one. Optional: Place serving amount of salsa in hot skillet and sauté for one minute.
