Western Beef and Corn Pie

Crust

1 C all purpose flour
1/2 C yellow corn meal
2 T sugar
1 t. baking powder
1 t. salt
1/2 C skim milk
2 T oil
1 egg

Blend all crust ingredients and spoon into a 9 or 10 inch pie pan that has been sprayed with a non-fat cooking spray.  Sprinkle with 1/2 cup low-fat cheddar cheese.  Set aside.

Filling

1 lb. ground beef
1/2 t. salt
1/2 t. chili powder
1/2 C low-fat shredded cheddar cheese
1/4 to 3/4 C barbecue sauce
12 oz. Mexican whole kernel corn
6 oz. tomato paste

Brown ground beef and drain off fat.   Stir in remaining ingredients except cheese.  Pour filling into crust.   Sprinkle with cheese.  Bake at 400 degrees for 25 to 30 minutes.
