Western Beef and Corn Pie April 19, 2001 at 4:55 PM CDT - Updated July 2 at 2:40 AM Crust 1 C all purpose flour1/2 C yellow corn meal2 T sugar1 t. baking powder1 t. salt1/2 C skim milk2 T oil1 egg Blend all crust ingredients and spoon into a 9 or 10 inch pie pan that has been sprayed with a non-fat cooking spray. Sprinkle with 1/2 cup low-fat cheddar cheese. Set aside. Filling 1 lb. ground beef 1/2 t. salt1/2 t. chili powder1/2 C low-fat shredded cheddar cheese1/4 to 3/4 C barbecue sauce12 oz. Mexican whole kernel corn6 oz. tomato paste Brown ground beef and drain off fat. Stir in remaining ingredients except cheese. Pour filling into crust. Sprinkle with cheese. Bake at 400 degrees for 25 to 30 minutes.
