Chicken Quesadilla

8 Burrito flour tortilla shells
1 C chicken or 1 canned chicken, drained, cooked and diced
1/2 C Cheddar cheese, shredded
1/2 C Refried beans
1/2 C Salsa

sour cream, low fat
black olives

Fill tortilla shell with 1-2 tablespoons beans and chicken.  Sprinkle with cheese.  Fold tortilla shell in half.  Moisten edges of the shell with water so that the edges stick together.   Heat in the oven for 10 minutes or until warm and cheese has melted or heat in a skillet sprayed with a non-stick vegetable cooking spray.  Top with salsa, sour cream, black olives, and tomatoes if desired.

Ground beef, cooked may be substituted for chicken
