Ostrich Caccuatores

Non stick cooking spray
4 lbs. Ostrich pieces (Fan, Tenderloin, Oyster)
2 C Sliced mushrooms
2 C Chopped green bell pepper
3/4 C coarsely chopped onion
3 Cloves garlic, minced
1 Can (16oz.) whole tomatoes, undrained and coarsely chopped
3/4 C Tomato juice
1/2 C Water
1/4 C Tomato paste
1 T Sugar
2 t. dried rosemary (or fresh)
1 t. dried dried basil leaves (or fresh)
1/2 t. dried oregano leaves (or fresh)
1/4 t. ground black pepper
6 C hot, cooked spaghetti

1.  Generously spray non-stick dutch oven or large non-stick skillet with cooking spray.  Heat over medium heat until hot.  Cook 5 to 7 minutes or brown on both sides.

2.  Add mushrooms, bell pepper, onion and garlic to dutch oven; cook and stir 3 to 4 minutes.

3.  Stir in canned tomatoes with juice, 3/4 cup tomato juice, water, tomato paste, sugar, rosemary, basil, oregano, salt and pepper; bring to boil over high heat.  Reduce heat to low; simmer covered 25 minutes, uncover, pour over spaghetti; garnish as desired.

NOTE:  Caccuatores is an Italian work that refers to foods prepared "hunter-style" a naturally healthy way of cooking with mushrooms, onion, tomatoes, and various herbs.  The classic dish is served over spaghetti, a good source of complex carbohydrates.
