Pear-Apple Crisp

3 ripe pears, peeled, cored and sliced (3 1/2 C)
2 tart apples, peeled, cored and sliced (2 1/2 C)
2 T lemon juice
2 T apple juice
1 t. vanilla
3/4 C all purpose flour
1/3 C sugar
1/2 t. cinnamon (ground)
1/4 t. ground all-spice
2 T margarine
1 T vegetable oil

Preheat oven to 350 degrees. In a large bowl, toss together the pears, apples, lemon juice, apple juice and vanilla. Put in a 9-inch pie plate. In a medium size bowl, stir together the flour, sugar, cinnamon and all-spice. Cut in butter with a pastry blender until mixture resembles coarse crumbs, then stir in oil. Spoon mixture on top of fruit. Bake 30 minutes, then remove from oven and spoon juices over topping, Bake 15 minutes more or until the fruit is soft and topping is crisp.

Makes 6 to 8 servings.
