Chicken and Orange Salad

2 C leaf lettuce, torn
2 C iceberg lettuce, torn
1/2 C mandarin oranges
1 C chicken, cooked, chopped
1/4 C sauteed water chestnuts
1/2 C honey-roasted peanuts
2 hard-cooked eggs, sliced

Combine greens with mandarin oranges, chicken and water chestnuts in a bowl; mix well. Place on serving plates. Top with peanuts and eggs. Serve with dressing.

Cooked Orange Dressing

1/4 C sugar
1/2 t. salt
1 1/2 T flour
1 egg
2 T vinegar
3/4 C orange juice

Combine all ingredients in saucepan; mix well. Cook over medium heat until thickened, stirring constantly. Chill until cold.
