2 C low fat cottage cheese
1 egg
1 C grated Parmesan cheese
2 T parsley
1 C low fat mozzarella cheese
12 manicotti shells
1 (30 oz.) jar of spaghetti sauce
2 T grated Parmesan cheese

1. Mix together first 5 ingredients and stuff mixture into the uncooked shells.
2. Cover the bottom of a baking dish with a small amount of spaghetti sauce.
3. Place filled shells in the dish. Pour remaining spaghetti sauce over the stuffed shells.
4. Cover with aluminum foil and bake for 90 minutes at 350 degrees.
5. Sprinkle 2 tablespoons Parmesan cheese on top before serving.
