Potato Omelette

2 T Butter or margarine
2 Medium potatoes, thinly sliced
Salt and pepper to taste
1 Small onion
1/2 of green pepper, chopped
1/2 pound of ground sausage, browned, drained, and crumbled
1 Medium tomato, thinly sliced
6 Eggs or 3 whole eggs plus 4 egg whites, well beaten

Melt butter or margarine in a large skillet. Add sliced potatoes, a few at a time and cook until lightly browned on both sides and nearly tender. Remove from skillet and sprinkle with salt and pepper. Cook onionand pepper in the same pan until tender. Return potatoes to pan. Sprinkle with cooked sausage. Then arrange tomato slices on top. Cover and cook over low heat for 10 minutes or until potatoes are tender. Pour well beaten eggs over potates in skillet, cover and cook over low heat until eggs are set. Cut omlette into wedges. Serves 4
