Chicken Salad with Tangy Mustard Dressing

1 C diced, cooked chicken
1 small carrot (peeled and shredded), optional
3 T reduced calorie mayonnaise or salad dressing
2 sweet pickles (chopped) or 2 T sweet relish
1 1/2 t. Dijon mustard
1 t. horseradish
4 slices whole-wheat bread

In a small bowl combine chicken, carrot, mayonnaise, sweet pickle, mustard and horseradish. Spread each of 2 slices of bread with with one-half of the mixture, then top with remaining bread and cut into halves or fourths.
