Baked Ziti


1/4 C Fat-free chicken broth
1 C Onion, chopped
1 t. Garlic powder
1 - 15 oz. can Italian tomatoes
1 - 6 oz. can tomato paste
2 t. Sugar
1 t. Oregano
1/2 t. Basil
1 Pkg. Ziti noodles
2 T parsley, chopped

Cheese Layer

16 oz. Non-fat cottage cheese
2 C Non-fat mozzarella cheese
3/4 C Egg substitute or 1 1/2 egg
1 T parsley
1/2 t. Salt
1/4 t. Pepper


Sauté onion and garlic in chicken broth until brown.  Add tomatoes and tomato paste, and 1 1/2 C water, parsley salt, sugar, oregano, basil.  Mix well and simmer covered 30 minutes, but stir occasionally.

Preheat oven at 350 degrees.  Cook noodles as directed on package.

Mix cheese as follows:

In a large bowl combine cottage cheese, 1 C mozzarella cheese, egg substitute, parsley, salt and pepper until well blended.

In a casserole dish that has been sprayed with a non-fat cooking spray, layer 1/2 noodles, 1/2 tomato sauce, and 1/2 cheese mixture.  Place 2nd half noodles, tomato sauce, and cheese mixture.  Top with 1 C mozzarella cheese and bake for 45 minutes uncovered.
