Skillet Ham and Potatoes

1 T Oil
1 Large (16 oz.) Pkg. frozen potatoes
1 t. Salt
1/8 t. Pepper
2 T Flour
1 T Mustard
1 1/2 C Skim milk
1 lb. Cooked ham, cut into small pieces
1/2 C Green onions
1 C Cheese, Shredded

Heat oil in skillet.  Add potatoes, salt and pepper; cook over medium heat until lightly browned, stirring occasionally.  Combine flour, mustard and milk in small bowl, mix with fork until well blended.  Stir milk mixture and ham into potatoes; cook until mixture thickens, stirring occasionally.  Reduce heat; simmer for 5 minutes longer or until potatoes are tender.  add onions and cheese before serving.
