1 Whole graham cracker, crushed or 2 T. graham cracker crumbs, divided 1 Pkg. (4 serving size) Sugar free lemon flavor gelatin 2/3 C Boiling water 1 C Low-fat cottage cheese 1 Container (8-oz.) fat-free cream cheese product, softened 2 C Thawed light whipped topping 1 C Low-calorie cherry pie filling or fresh berries
Spray 8 or 9 inch springform pan or 9 inch pie plate with non-stick cooking spray. Sprinkle side of pan with graham cracker crumbs. (2T or 4 crackers). In a small bowl dissolve gelatin in 2/3 C boiling water. Pour into blender or processor. Add 1 C no fat cottage cheese and 1 container (8-oz.) no fat cream cheese. Blend at medium speed in pulse in processor until smooth. Pour into large bowl. Fold or whisk in Light whipped topping (thawed). Pour into prepared pan. Smooth top. Sprinkle crumbs on outside edge if desired. Chill about 4 hours. Before serving, decorate top of pie with fresh berries or low calorie cherry pie filling.
