Chuck Wagon Skillet Dinner

1 lb. Ground beef or ground turkey
1/2 C Chopped onion
1 (1 1/4oz.) pkg. taco seasoning mix
1 1/2 C Water
1 1/2 C Thinly sliced zucchini
1 C Frozen or canned corn
1 (14 1/2oz.) can stewed tomatoes
1 1/2 C uncooked instant rice
4 oz. (1 Cup) shredded cheddar cheese

In a large skillet, brown ground beef and onion; drain.  Stir in remaining ingredients except rice and cheese; bring to a boil.  Stir in rice.  Reduce heat to low; cover and simmer 5 to 7 minutes or until liquid is absorbed, stirring occasionally.

Remove from heat.  Fluff mixture with fork; sprinkle with cheese.  Cover; let stand 3 minutes or until cheese is melted.
