Sausage and Cheese Balls

2 1/2 C Biscuit mix or Master Mix (See below)
1 lb. Sausage - Cooked and drained
8 oz. Cheddar Cheese - shredded
Approximately 1.2 cup water
Cayenne pepper to taste (Optional)

Cook sausage and drain.  Mix in biscuit mix and cheddar cheese.  Add water, enough so that the dough sticks together.  Form mixture into small balls and place on ungreased cookie sheet.   Bake at 350 degrees for 20 - 30 minutes or until lightly browned.  Serve immediately.  May be stored in air tight container in the refrigerator for 2 - 3 days and can be reheated in the microwave.

Master Mix

4 1/2 C Flour
2 1/2 T Baking powder
1 1/2 t. Salt
1 t. Cream of Tartar
2 T Sugar
1/2 C Non-fat dry milk powder
1/2 C Oil

Mix together baking powder, salt, cream of tartar, sugar and powdered milk.)  Make sure ingredients are thoroughly combined)
1.  Cut in oil with pastry blender until mixture looks like course cornmeal
2.  Store covered in plastic cantainer at room temperature.  (Add two Bay Leaves to discourage bugs.)
