1 C Rice
2 C Water
1 t. Salt (Optional)
1 T Oil or margarine (Optional)
In a 2 quart saucepan combine ingredients above. Stir lightly, bring to a rolling boil and reduce heat to simmer (low boil). Cover with a tight fitting lid and simmer for 15 minutes. Remove from heat. Let stand covered 5 minutes. Toss lightly with a fork.

1 Can cream of celery soup (Healthy Request)
1 Can cream of chicken soup (Healthy Request)
1 C Low fat mayonnaise
2 T Lemon Juice
1/4 t. pepper
1 C Cracker crumbs, fine
1 C sliced almonds
1 1/2 - 2 C Mild cheddar cheese, shredded
Mix all main ingredients. Place in 9x13 inch glass dish; garnish with cheese and almonds. Bake at 350 degrees for 30 minutes.
