Fresh Peach Pie

1 Pie Crust, baked
3/4 C Sugar
1 1/2 C Water
2 1/2 T Cornstarch
1 (3 oz. Box) peach gelatin
3 to 4 Medium peaches, peeled and sliced
Non-dairy whipped topping

Cook sugar water and cornstarch until thick.  Remove from heat and add gelatin.  Cool slightly, then add peaches.  Pour into baked pie crust and chill for 3 to 4 hours.  Serve with non-dairy whipped topping.
