4 C potatoes, cooked and diced
2 C White Sauce (recipe to follow)
1/2 C onion, chopped fine
1/4 t salt
1/2 t pepper
12 oz. low-fat cottage cheese, blended till smooth
1 C low-fat cheese
1 C corn flakes, coarsely crushed
1 T margarine, melted
Combine first six ingredients and pour into a casserole dish sprayed with a non-fat spray. Top with cheese. Mix crushed corn flakes with melted margarine and place on top. Bake at 350 degrees for 1 hour.
2 C skimmed milk
1 T margarine
1/4 C flour
salt and pepper to taste
Warm milk in a saucepan over low heat and add margarine. Add a portion of the heated mixture to the flour in a bowl. Mix until smooth. Add the flour mixture to the rest of the milk and margarine mixture and heat until it thickens, stirring constantly. Season with salt and pepper.
