4 C Zucchini, Sliced 1 C Onion, Diced 1/4 C Water 2 Eggs 1/4 t. Oregano 1/4 t. Basil 1/4 t. Garlic 1/2 t/ Salt 2 T Parsley Flakes 1/8 t. Pepper 4 oz. Mozzarella Cheese 3 Slices Bread
Slice zucchini with large section of grater. Spray a non-stick skillet with fat-free cooking spray. Simmer zucchini and onions in skillet for 10 minutes with water. While this is simmering, whisk together eggs,spices and 1/4 cup or 2 oz. mozzarella cheese. Add cooked zucchini and onions after draining water off, and mix ingredients well. Use a blender to make bread crumbs from the 3 slices of bread. Spray pie plate with non-stick spray and press bread crumbs to form a crust. Pour in zucchini mixture. Top with remaining cheese and cook at 325 degrees for 20-30 minutes until lightly browned on top.
