Tiffany's Rice Salsa

3 C Cooked long grain rice
1 (15 oz.) Can black-eyed peas, rinsed and drained
1 (15 oz.) Can whole kernel corn, drained
3 Tomatoes, chopped
6 Green onions with tops, chopped
2 Cloves of garlic, minced
1 Medium-sized green bell pepper, diced
1/3 C chopped parsley or celery
1 (8 oz.) Jar hot or medium salsa
Salt and Pepper to taste
1/3 C low-fat Italian salad dressing

Combine the first 9 ingredients and salt and pepper.  Then Mix with the Italian dressing.  Cover and chill at least 2 hours.  Serve with tortilla chips. Yields 6 cups.  Prep: 30 minutes
