Red Beans and Rice

1T Salad Oil
1 C Chopped Onion
1/2 C Chopped Celery
2 Garlic Cloves, minced or 1/4 t. garlic powder
1 Can (15.5 ounce) or 1 2/3 C cooked kidney beans
2 C Cubed Cooked Ham
1/2 C Rice, uncooked
1/4 C Chopped bell pepper

Heat oil in a 3-quart saucepan

Add onions, celery, bell pepper and garlic: cook until onions are clear.  Be careful not to burn.

Drain beans; reserve liquid

Add enough water to liquid to measure 3 cups.

Add liquid and remaining ingredients to saucepan and bring to a boil.

Reduce heat; cover and simmer 25 minutes.
