JONESBORO, AR (KAIT) - Madison Gibson has her sights set on a career as a crop consultant. But, this Brookland High School junior has a few "crowns" to take care of first.
Gibson won the title of Miss Craighead County Rice, sponsored by Craighead County Farm Bureau. Then, she competed for Miss Arkansas Rice 2016-2017 in Brinkley and won that title as well.
"When they said my name, I was ecstatic," Gibson said. "Now I get to promote rice all across the state, so that's awesome!"
Gibson is the daughter of Scott and Karie Gibson.
"My dad farms rice, soybeans, corn and milo," Gibson said.
As a student, Gibson is a part of a farm business management team and is president of the FFA chapter at Brookland.
"I've job shadowed some and I'm interested in being a crop consultant," Gibson said. "So this had kind of given me a head start in some things.
Gibson will present her two rice recipes for the public to sample at a rice-tasting event happening on Friday, Sept. 2 from 11 a.m. to 1 p.m. on the second floor of Regions Bank.
"My main dish is seafood gumbo. It's easy to cook," explained Gibson. "You can put it in the crockpot. I have a side dish, too—since gumbo really isn't a summer food. It's Rice Crispy Cookies."
1 cup butter
1 cup sugar
1 cup brown sugar
1 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
2 1/2 cups flour
3 cups Rice Krispy cereal (add more to taste)
Preheat oven to 375 degrees. Mix the butter, sugars, vanilla and eggs together. In a separate bowl, mix the baking soda, salt and flour; then combine both bowls together. Drop by teaspoon onto a greased cookie sheet. Bake 8-10 minutes.
4 cups white rice (medium or long grain)
1 chicken breast, cubed
1/2 lb. precooked shrimp
4 oz. of polish sausage, sliced
1/2 cup onions, diced
1/2 cup green peppers, diced
1/3 cup celery, diced
1 (14 oz.) cans chicken broth*
1/2 (14 oz.) can okra
1/2 (14 oz.) can diced tomatoes
1/4 Tbs. cayenne pepper (to taste)
1/2 tsp. salt
1/2 tsp. pepper
Prepare rice according to package directions. Saute chicken, onion and green peppers. Combine all ingredients, excluding rice into a crockpot. When ready to serve, add the prepared rice. Crockpot may be kept on low to keep the dish warm.
*Low sodium broth may be substituted.
