Breakfast Cookies

2/3 C Margarine (softened)
1 C Sugar
1 Egg
1 t Vanilla
1 C All purpose flour**
1 t Baking Soda
1 t Salt
3 C Uncooked Oats (Quick or Old Fashioned)
1/2 C Shredded Sharp Cheddar Cheese
6 Crispy Cooked Bacon Slices, Crumbled

Beat together butter, sugar, egg and vanilla. Add combined flour, soda and salt to butter mixture; mix well. Stir in oats, cheese and bacon. Shape into balls and flatten. Place on a cookie sheet that has been sprayed with a non-fat cooking spray. Bake in preheated oven at 350 degrees for 15-20 minutes or until lightly browned.

Optional: 1/4 C whet germ may be added to add fiber to this recipe.

**If self-rising flour is used, omit the soda and salt.
