Carrot-Pineapple Muffins or Bread

1 C Sugar
1/3 C Applesauce
3 Eggs
1 C Carrot, Grated
1 C Crushed Pineapple, Undrained
3 C Flour
1t Salt
1t Soda
1 1/2 t Cinnamon
Optional:  1 C Nuts

Mix all ingredients and put in 2 loaf pans that have been sprayed with a non-stick cooking spray or 18 muffin cups with paper liners. 
For loaves, bake 1 hour at 325 degrees.
For muffins, bake 20 minutes at 325 degrees.
