1 C Shortening
1 C Brown Sugar (packed)
1/2 C Granulated Sugar
2 Eggs
1 t Vanilla
3/4 C Applesauce
1 3/4 C Flour
1 T Baking Powder
1 t Cinnamon
1/4 t Salt
3 C Quick Cooking or Rolled Oats
1 C Raisins or other chopped dried fruit

Preheat oven to 350 degrees F. Grease a 13x9x2 inch pan. Cream together shortening, brown sugar and granulated sugar. MIx in eggs, vanilla and applesauce. In another bowl, stir together flour, baking powder, cinnamon and salt. Add to the creamed mixture. Stir in oats and dried fruit. Spoon batter into the greased pan. Bake for 30-35 minutes or until brown. Cool completely; divide into 24 cookie bars. Store in airtight container.
