Grilled Chicken Breast Sandwiches

1 T Vegetable Oil
1 Medium Red Bell Pepper, cut into strips
1 Medium Green Bell Pepper, cut into strips
3/4 C Onion Slices
2 Cloves Garlic, minced
1/4 t Salt
1/4 t Black Pepper
4 Boneless Chicken Breast Halves, grilled
1 Loaf French Bread, cut into quarters, split and toasted.

Heat oil in a medium nonstick skillet over medium heat. Add bell peppers, onions and garlic; cook and stir 5 minutes. Reduce heat to low; cook and stir vegetables about 20 minutes or until tender. Sprinkle with salt and pepper, set aside.

Grill chicken on covered grill over hot coals, 10 minutes on each side or until chicken is no longer pink in the center, or broil chicken 6 inches for the heat source 7 to 8 minutes on each side or until no longer pink in the center.

Place chicken on toasted bread slices and spoon pepper mixture evenly over the chicken.
