Oriental Cashew Chicken Casserole

1/2 C Onion, chopped
1 C Celery, chopped
2 T Margarine
3/4 C Fat-free Chicken Broth
1/4 C Low sodium Soy Sauce
4 C Chicken, chopped
1 (10 oz.) Can Fat-free Cream of Chicken Soup
1 (10 oz.) Can Fat-free Cream of Celery or Mushroom Soup
1/2 C Cashews, chopped
3 C Rice, cooked
3 ounces Chow Mein Noodles

Saute onions and celery in margarine in skillet until tender. Add chicken broth, soy sauce and chicken. Cook until chicken is cooked through, adding more soy sauce if desired. Stir in soups and cashews. Combine with rice in a baking dish. Bake at 350 degrees for 10 to 15 minutes. Top with chow mein noodles and bake for 5 more minutes.
