Recipe from Vickie Pierre of Lake Charles, La.

Ingredients:

  • 1 1/4 cup corn meal
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup milk
  • 1 large chopped onion
  • 2 eggs
  • 1/2 - 1 cup cooking oil
  • 1/2 large chopped bell pepper
  • 1/2 clove garlic
  • 1 can cream-style corn
  • 8 oz. grated cheese
  • Green onion
  • Jalapeno pepper (if desired)
  • Creole seasoning
  • Crawfish, shrimp or crabmeat (As much or as little as you like.)

Directions:

Mix all ingredients well and bake at 350 degrees for 45-55 minutes in a 9 x 13 pan.

Vickie says: In place of the jalapeno, I sometimes use ground cayenne pepper for heat.
