Recipe from Miss Cross County Rice of Wynne, Ark.

Total Time: 30 min
1 Box Rice A Roni Fried Rice
2 Tablespoons of margarine
1 1/2 cups of water
1 package Seasonings from Rice A Roni box
1 can of chicken broth
1/3 cup rice, uncooked
1/3 cup thin spaghetti, uncooked and broken into small pieces
1 can Rotel tomatoes and chilies with juice
1 can chicken, white meat drained
1. Combine rice mix and margarine in large skillet.
2. Saute over medium heat until vermicelli is golden brown, stirring frequently.
3. Slowly stir in water and seasoning. Add chicken broth, rice, spaghetti, Rotel, and chicken. Bring to a boil.
4. Cover with a lid and reduce heat to simmer. Cook 20 minutes with the lid on the pan.
Yield: 8 servings
Comments: This is a quick and economical one pan meal.
