Meg's Down Home Rice

Meghan Cureton - Miss Arkansas Rice - Craighead County 2002

2 C Cooked Long Grain Rice
1 lb. Sausage
1 Small Sweet, Chopped Onion
1 15oz. Can Whole Kernel corn (drained)
1 10oz. Can of Rotel (diced tomatoes and green chilis)
1 10-3/4oz. Can Cream of Mushroom Soup
1/2 lb. Velveeta Cheese
1 10oz. Jar Sliced Mushrooms (drained)
2 C Shredded Cheddar Cheese

Preheat oven to 375 degrees. Brown sausage an onion in skillet, then drain. Combine sausage, corn, Rotel, cream of Mushroom soup, Velveeta cheese, sliced mushrooms and rice. Pour into 9x13" baking dish. Bake in oven for 30 minutes. Remove dish and sprinkle top with shredded cheddar cheese. Place back in oven for 10-15 minutes or until cheese melts.

Serves 8-10 people.
Optional: Garnish with Pimentos.
